Fave Grandchildren’s Breakfast: Pannukukku Pancake

I’m sure ya’ll have many delicious breakfast recipes that are popular with the kids. This recipe has been passed down through the generations from an old family friend. It has since become a favorite of my grandchildren and hopefully for their children some day. It’s very easy, delicious and never fails!! Don’t know about ya’ll but I love recipes that are tried and true’s. Enjoy! 🙂

Gladys’ Finnish Pancake:

Beat 4 eggs, using wire whisk

Add 1/3 C sugar; beat

Add 2/3 C flour with 1/4 tsp salt

Add 1/4 lb (1/2 or a little less) melted butter–Melt in pan you bake it in–at least 9X12 or cookie pan with sides

Add a splash of vanilla extract

Last of all, BLEND IN SLOWLY 2 CUPS OF MILK (a good way to use up old milk!)

Bake in the pan you melted the butter in, for 20 to 25 minutes at 400 to 425 degrees (depending on your oven). It will puff up in the pan then sink after you take it out of the oven. Yummy with syrup or fruit jams/syrups.
