Tired of the usual holiday Ham or Turkey entree?

Tired of the tradition turkey and ham meals??  How about Coq au Vin? French Cookery: chicken stewed in a sauce of wine, diced pork, onions, garlic, and mushrooms.

This wonderful crock pop meal is straight out of Prevention Guide “Slow Cooker Recipes” or can be found on prevention .com (see address below). Another keeper ya’ll!! I grew up on this recipe as a fairly regular staple of my mom’s favorite family recipes.Obviously, she didn’t use the crock pop but the flavor is so similar and much less time-consuming.

This is a fantastic hearty and gourmet-ish meal the whole family will love.  You can stretch your food dollars by buying a whole chicken and cut it up or buy one cut up. Only things I had to buy at the store were the Herbes de Provence spice and some pearl onions. I also used dried mushrooms that my husband had picked last spring, instead of fresh mushrooms. I reconstituted the dried mushrooms by putting in a glass dish and pouring enough water over them to almost cover them, put in microwave for 2 -3 minutes then let sit to plump up. I saved and used the leftover mushroom water to help dilute the sauce a little further as it typically has a thicker consistency in this recipe.

Get out the crock pop and put all ingredients in as directed and turn on high for 4-5 hrs. You won’t be sorry as it is delicious!!!
