Mac and Cheeseman Recipe–Another Belle Favorite

IMG_0389 My granddaughter is coming to stay with me for a few days and we’re working on eating more vegetables. What do ya’ll think? Would this make you want to eat your peas? Here’s one that every macaroni and cheese lover will rave about. Best part is its homemade. Its loaded with calories and all those sinful no-no’s so eat at your own risk!!! Live by the “moderation” concept and don’t make it on a regular basis, which should make it OK!!!  Enjoy! 🙂

2 1/2 C uncooked elbow macaroni

6 Tbl butter or marg., divided

1/2 C all-purpose flour

1 tsp salt

1 tsp sugar

2 C milk

8 oz process american cheese, cubed (2 C) (or use what you have)

1 1/3 C small curd cottage cheese

2/3 C sour cream

2 C (8oz) shredded sharp cheddar cheese

1 1/2 C soft bread crumbs

Cook macaroni according to package directions; drain. Please in a greased 2 1/2 qt baking dish. In a saucepan, melt 4 Tbl butter. Stir in flour, salt and sugar until smooth. Gradually stir in milk. Bring to a slow boil; cook and stir for 2 mins or until thickened. Reduce heat; stir in cheese (american) until melted, stir in cottage cheese and sour cream. Pour over macaroni. Sprinkle top with shredded cheddar cheese. Melt remaining butter and toss with soft bread crumbs; sprinkle over top. Bake, uncovered at 350 degrees for 30 mins until golden brown. YIELD: 6-8 servings.  Bon Appetit!!
